Oregano Greek Salad

This Oregano Greek Salad is made with fresh vegetables and tossed in a fresh oregano vinaigrette and creamy feta cheese!

 

Yield: 2 servings

Yield per plant: about 4-5 salads

Total time: 10 minutes

Ingredients

1 green bell pepper; sliced

1 cup sliced cucumbers

½ medium red onion; sliced

1 cup cherry tomatoes; sliced in half

¼ cup kalamata olives; pitted and sliced in half

4 oz. feta cheese; crumbled

 

Oregano Vinaigrette:

¼ cup extra virgin olive oil

2 Tbsp. red wine vinegar

1 ½ tsp. Rocket Farms fresh oregano; minced

¼ tsp. garlic; minced

1 tsp. lemon juice

¼ tsp. salt

¼ tsp. black pepper

Instructions:

  1. Combine sliced bell pepper, cucumber, onion, tomatoes, olives and cheese in a salad bowl.
  2. In a medium bowl whisk together all of the vinaigrette ingredients until combined and pour over the salad. Toss until all salad ingredients are combined and evenly coated. Enjoy!
