Thyme Lemon Shortbread Cookies

These Thyme Lemon Shortbread Cookies are buttery, sweet, savory, and will melt in your mouth. Fresh thyme makes these cookies extraordinary and made with a few simple ingredients!

 

Yield: 2 dozen

Yield per plant: about 6 batches

Prep time: 15 minute + 1 hour to chill

Cooking time: 15 minutes

Ingredients

½ cup salted butter

1 Tbsp. fresh thyme; minced

¼ cup + 2 Tbsp. sugar

Zest of 1 lemon, about 1-2 tsp.

1 Tbsp. lemon juice, about ½ lemon

1 egg yolk

¼ tsp. baking powder

1 cup + 2 Tbsp. flour

Instructions:

  1. In a large bowl with an electric mixer cream together butter, thyme, sugar, lemon zest, and lemon juice until light and fluffy.
  2. In a small bowl whisk the flour and baking powder. Gradually add the flour mixture to the butter mixture until a cookie dough has formed.
  3. Shape the dough into a 12-inch log and wrap in wax paper or plastic wrap. Place in the refrigerator and let chill for 1 hour.
  4. Preheat oven to 350 degrees F and line 2 baking sheets with parchment paper. Cut log into ½ inch slices and place cookies 2 inches apart. Bake for 12-14 minutes or until the edges are golden brown. Remove from the oven and carefully place on a cooling rack for at least 15 minutes to harden. Enjoy!
