Parsley Potato Salad

This Parsley Potato Salad is perfect for any occasion and packed with flavor! Serve as an appetizer or side dish.

Ingredients

1.5 lbs. baby red potatoes

2 Tbsp. olive oil

2 tsp. red wine vinegar

¼ cup Rocket Farms parsley; plus extra to garnish

1 tsp. Dijon mustard

¼ tsp. garlic; minced

1 Tbsp. lemon juice

Zest of 1 lemon

1 tsp. salt

¼ tsp. black pepper

Instructions:

  1. Bring a large salted pot of water to a boil and cook potatoes until tender- about 10 minutes.
  2. Once potatoes are cooked, drain and let cool. In the meantime, whisk together the olive oil, vinegar, parsley, mustard, garlic, lemon juice, lemon zest, salt and pepper.
  3. Once potatoes are cooled, slice into ¼ inch rounds and place in a large bowl. Pour dressing over potatoes and mix until combined and coated. Garnish with parsley and serve. Enjoy!
