Mint Pesto Lamb Lollipops

These Lamb Lollipops are tender, juicy and extremely easy to make! Grilled to perfection and then topped with a refreshing herb pesto!


Yield: 4 servings

Prep time: 8 hours

Cook time: 10 minutes

Total time: 8 hours + 10 minutes


1.5 lbs. rack of lamb; about 8 lamb lollipops

1 cup pomegranate juice

1/3 cup Rocket Farms mint; chopped

3 tsp. garlic; crushed

½ tsp. salt

¼ tsp. black pepper


Herb Pesto:

1 cup Rocket Farms mint

½ cup Rocket Farms parsley

¼ cup Rocket Farms basil

2 Tbsp. almonds

2 cloves garlic

3 Tbsp. olive oil

2 Tbsp. lemon juice

1 tsp. lemon zest

1 Tbsp. parmesan cheese

Salt and pepper to taste


  1. Whisk together pomegranate juice, mint, garlic, salt and pepper in a bowl. Add lamb lollipops and cover with plastic wrap. Refrigerate for 8 hours up to overnight.
  2. Add all pesto ingredients to food processor and pulse until pesto forms.
  3. Heat grill pan on medium heat and cook each side of the lamb for 2-4 minutes. The internal temperature should between 130-145 degrees F. Place lamb lollipops on a serving platter and top with fresh herb pesto. Serve immediately and enjoy!

*Please note the thickness of lamb will affect the cooking time
